- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 cups fresh spinach, chopped
- ½ cup grated Parmesan cheese
- Fresh parsley, for garnish
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chicken breasts and cook until browned on both sides, approximately 5-7 minutes. Remove and set aside.
- In the same pot, add the diced onion, carrots, and celery. Sauté until they soften, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Pour in the chicken broth and bring to a boil.
- While the broth heats, shred the cooked chicken into bite-sized pieces.
- Once boiling, return the shredded chicken to the pot. Add Italian seasoning, salt, and pepper.
- Reduce the heat to low, and slowly add the heavy cream, stirring until well combined.
- Mix in the chopped spinach and cook until wilted, about 2 minutes.
- Stir in the grated Parmesan cheese until melted and incorporated.
- Ladle the soup into bowls and garnish with fresh parsley.
