  • ½ cup granulated sugar
  • 2 cups all-purpose flour

  • ½ cup raspberry jam
  • ¼ cup white chocolate, melted

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the softened butter and granulated sugar together until light and fluffy. Incorporate the vanilla extract, then gradually add the flour, mixing gently until a cohesive dough forms.
  3. On a lightly floured surface, roll the dough out to approximately ¼ inch thickness.
  4. Evenly spread the raspberry jam over the rolled dough.
  5. Carefully roll the dough sheet into a log shape, sealing the edges gently. Chill in the refrigerator for 30 minutes.
  6. Remove the chilled dough log and slice into ¼ inch thick rounds. Arrange the slices on the prepared baking sheet.
  7. Bake the cookies for 12-15 minutes, or until the edges turn lightly golden. Transfer cookies to a wire rack to cool completely.
  8. Once cooled, drizzle the melted white chocolate over the cookies. Allow the chocolate to set before serving.
