Description

A refreshing and healthy quinoa salad perfect for meals or sides.


Ingredients

Scale
  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water for about a minute.
  2. Combine quinoa and water in a pot; bring to a boil.
  3. Reduce heat to low; cover and simmer for 15 minutes.
  4. Remove from heat and let it sit for 5 minutes.
  5. Fluff the quinoa with a fork and let it cool.
  6. In a bowl, mix tomatoes, cucumber, onion, and parsley.
  7. Add cooled quinoa to the vegetable mixture.
  8. Drizzle with olive oil and lemon juice.
  9. Season with salt and pepper, mix well.
  10. Serve chilled or at room temperature.
