Description
A refreshing and healthy quinoa salad perfect for meals or sides.
Ingredients

- 1 cup quinoa, rinsed
- 2 cups water
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water for about a minute.
- Combine quinoa and water in a pot; bring to a boil.
- Reduce heat to low; cover and simmer for 15 minutes.
- Remove from heat and let it sit for 5 minutes.
- Fluff the quinoa with a fork and let it cool.
- In a bowl, mix tomatoes, cucumber, onion, and parsley.
- Add cooled quinoa to the vegetable mixture.
- Drizzle with olive oil and lemon juice.
- Season with salt and pepper, mix well.
- Serve chilled or at room temperature.

Great for meal prep! Store in an airtight container in the refrigerator.
