Instructions

  1. Preheat oven to 350°F (175°C). Line 18 muffin cups in two 12-cup muffin pans with paper liners.
  2. In a small bowl, whisk together the flour, baking powder, baking soda, salt, and pumpkin pie spice. Set aside.
  3. In the bowl of an electric stand mixer fitted with the paddle attachment, combine the pumpkin puree, oil, eggs, and 1 1/4 cups of sugar on the lowest speed.
  4. Add the flour mixture to the wet ingredients and mix on the lowest setting until just combined. Be careful not to overmix.
  5. In a small bowl, stir together the cinnamon and the remaining 1 tablespoon of sugar for the topping.
  6. Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.
  7. Sprinkle the tops of each muffin with the cinnamon sugar mixture.
  8. Bake for 20-25 minutes, or until the muffins are puffed and golden brown. A toothpick inserted into the center should come out clean.
