- ½ cup honey
- ¼ cup Dijon mustard

- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
- Season the chicken breasts with salt, pepper, garlic powder, onion powder, and paprika. Set aside.
- In three separate shallow dishes, place flour in the first dish, beaten eggs in the second, and pretzel crumbs in the third.
- Dip each chicken breast into the flour, coating it evenly. Shake off any excess flour, then dip it into the egg mixture, allowing any excess to drip off. Finally, coat the chicken in the pretzel crumbs, pressing gently to adhere.
- Place the coated chicken breasts on the prepared baking sheet. Lightly spray the tops with cooking spray or drizzle with olive oil for added crispiness.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the crust is golden brown. The internal temperature should reach 165°F (75°C).
- In a small bowl, whisk together honey, Dijon mustard, and apple cider vinegar until smooth. Adjust the flavors to your liking by adding more honey or mustard as desired.
- Once the chicken is done, remove it from the oven and let it rest for a few minutes before slicing. Drizzle the honey mustard sauce over the chicken or serve it on the side for dipping.
