Description

Pineapple Chicken is a sweet and savory Asian-inspired dinner made with juicy chicken breast, tender pineapple chunks, and a glossy soy-ginger sauce.


Ingredients

  • 1.5 lbs (680g) boneless, skinless chicken breast, diced
  • 2 tablespoons cornstarch
  • 1 tablespoon vegetable or avocado oil
  • Salt and black pepper, to taste
  • 1/2 cup pineapple juice
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons honey or brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon fresh ginger, grated
  • 2 garlic cloves, minced
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch + 2 teaspoons water (slurry)
  • 1 cup pineapple chunks, drained
  • 1 bell pepper, chopped
  • 1/4 cup green onions, chopped
  • Optional: sesame seeds, red pepper flakes

Instructions

  1. Pat chicken dry and toss with cornstarch, salt, and pepper.
  2. Whisk pineapple juice, soy sauce, honey, rice vinegar, garlic, ginger, and sesame oil.
  3. Heat oil in a skillet over medium-high heat and cook chicken 6–8 minutes until golden. Remove and set aside.
  4. Add bell pepper to the skillet and cook 2–3 minutes.
  5. Return chicken to pan, add sauce, and simmer 3–5 minutes.
  6. Stir in cornstarch slurry and cook until sauce is glossy.
  7. Fold in pineapple chunks, cook 1 minute, garnish, and serve.
