- 1.5 lbs (680g) boneless, skinless chicken breast, diced
- 2 tablespoons cornstarch
- 1 tablespoon vegetable or avocado oil
- Salt and black pepper, to taste
- 1/2 cup pineapple juice
- 1/4 cup low-sodium soy sauce
- 2 tablespoons honey or brown sugar
- 2 tablespoons rice vinegar
- 1 tablespoon fresh ginger, grated
- 2 garlic cloves, minced
- 1 teaspoon sesame oil
- 1 teaspoon cornstarch + 2 teaspoons water (slurry)
- 1 cup pineapple chunks, drained
- 1 bell pepper, chopped
- 1/4 cup green onions, chopped
- Optional: sesame seeds, red pepper flakes
Instructions
- Pat chicken dry and toss with cornstarch, salt, and pepper.
- Whisk pineapple juice, soy sauce, honey, rice vinegar, garlic, ginger, and sesame oil.
- Heat oil in a skillet over medium-high heat and cook chicken 6–8 minutes until golden. Remove and set aside.
- Add bell pepper to the skillet and cook 2–3 minutes.
- Return chicken to pan, add sauce, and simmer 3–5 minutes.
- Stir in cornstarch slurry and cook until sauce is glossy.
- Fold in pineapple chunks, cook 1 minute, garnish, and serve.
