Description

A tasty and wholesome vegetable lasagna loaded with fresh ingredients and layered with rich cheese.


Ingredients

  • 9 lasagna noodles
  • 2 cups marinara sauce
  • 1 zucchini, sliced
  • 1 bell pepper, diced
  • 1 cup mushrooms, sliced
  • 2 cups spinach
  • 15 oz ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions; drain.
  3. In a large skillet, sauté zucchini, bell pepper, and mushrooms until softened.
  4. Add spinach and cook until wilted.
  5. Spread a layer of marinara sauce on the bottom of a baking dish.
  6. Layer three noodles over the sauce, then spread half of the ricotta mixture, followed by half of the sautéed vegetables, and a layer of mozzarella.
  7. Repeat the layering process, finishing with noodles topped with marinara sauce, mozzarella, and Parmesan cheese.
  8. Bake for 30-35 minutes until bubbly and golden brown.
  9. Let it rest for 10 minutes before serving.

Feel free to add any of your favorite vegetables or herbs for extra flavor.
