Description

Creamy Pasta Salad With Peas and Herbs is a refreshing, flavor-packed cold pasta side dish made with rigatoni, bacon, peas, and a tangy sour-cream-and-mayo dressing.


Ingredients

  • 8 oz rigatoni pasta (or penne, rotini, shells)
  • 1 cup frozen green peas (thawed)
  • 6 strips bacon, cooked and chopped
  • 2 tablespoons chopped fresh chives
  • 2 tablespoons chopped fresh parsley
  • 1/2 cup mayonnaise
  • 1/3 cup sour cream
  • 2 teaspoons white vinegar
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste

Instructions

  1. Boil rigatoni in salted water until al dente. Drain and rinse under cold water to cool.
  2. Let frozen peas thaw at room temperature or run hot pasta water over them while draining.
  3. In a mixing bowl, whisk together mayonnaise, sour cream, vinegar, garlic powder, salt, and pepper.
  4. Add the cooled pasta, peas, bacon, parsley, and chives into the bowl. Toss gently to coat evenly.
  5. Refrigerate for at least 30 minutes to let flavors meld and dressing thicken.
  6. Stir before serving. Add extra herbs or a splash of milk if needed to loosen the dressing.
