Ingredients

  • 1 cup finely grated parmesan cheese
  • 1 teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ½ teaspoon dried basil

  • ½ teaspoon dried oregano

Instructions

  1. Preheat the oven to 425°F (220°C). Slice off the top and bottom of each acorn squash. Cut them in half and scoop out the seeds. Slice each half into 1-inch thick wedges.
  2. Combine the squash slices in a large mixing bowl with olive oil, parmesan cheese, garlic powder, kosher salt, dried basil, thyme, and oregano. Toss until evenly coated.
  3. Arrange the coated squash slices on a parchment-lined baking tray in a single layer. Press leftover mixture onto the tops for extra flavor. Bake for 20 to 25 minutes until soft and golden.
