Parmesan Herb Roasted Acorn Squash is a healthy and delicious appetizer for family dinners.

- ¼ cup extra-virgin olive oil
- 1 cup finely grated parmesan cheese
- 1 teaspoon garlic powder
- ½ teaspoon kosher salt
- ½ teaspoon dried basil
- ½ teaspoon dried thyme
- ½ teaspoon dried oregano
Instructions
- Preheat the oven to 425°F (220°C). Slice off the top and bottom of each acorn squash. Cut them in half and scoop out the seeds. Slice each half into 1-inch thick wedges.
- Combine the squash slices in a large mixing bowl with olive oil, parmesan cheese, garlic powder, kosher salt, dried basil, thyme, and oregano. Toss until evenly coated.
- Arrange the coated squash slices on a parchment-lined baking tray in a single layer. Press leftover mixture onto the tops for extra flavor. Bake for 20 to 25 minutes until soft and golden.
- Serve the roasted acorn squash on a platter. Enjoy with your loved ones.
