Description

A quick and easy one-minute protein brownie that is low in calories and packed with flavor.

Ingredients

Scale
  • 1/2 scoop (16g) Vanilla Protein Powder
  • 1 Tbsp (5g) Unsweetened Dark Cocoa Powder
  • 12 tsp Granulated Sugar Substitute (optional)
  • 1/4 cup (60g) Canned Pumpkin

Instructions

  1. In a bowl or mug, combine the vanilla protein powder, unsweetened dark cocoa powder, and granulated sugar substitute if using. Stir thoroughly to evenly distribute the dry ingredients.
  2. Add the canned pumpkin to the dry mixture and mix until you get a smooth, thick batter.
  3. For easy removal after cooking, transfer the batter to a second mug or bowl lightly sprayed with nonstick cooking spray.
  4. Microwave the mixture on high for 1 to 1.5 minutes if making a single serving. If doubling the recipe, microwave for 2 to 2.5 minutes. Watch carefully to prevent overflow.
  5. Let the brownie cool slightly before enjoying. The texture will be moist and fudgy.
