- 2 cups old-fashioned oats
- 1 cup shredded coconut
- 1 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture and mix just until combined.
- Stir in the oats, shredded coconut, and chocolate chips until evenly mixed.
- Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10–12 minutes, until the edges are golden brown and the centers are still soft.
- Let the cookies cool on the baking sheet for about 5 minutes.
- Transfer to a wire rack and let cool completely before serving.
