- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts
- 1 medium onion, diced
- 3 cloves garlic, minced
- 3 medium carrots, sliced
- 2 celery stalks, diced
- 4 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 1 teaspoon oregano
- Salt and pepper to taste
- 1 cup heavy cream
- 2 cups fresh spinach
- 1 cup cooked rice or pasta (optional)
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chicken breasts and cook for about 5-7 minutes on each side, until golden brown. Remove the chicken and set aside.
- In the same pot, add the onion, garlic, carrots, and celery. Sauté for 5-6 minutes until softened.
- Pour in the chicken broth, stirring well to combine.
- Add the thyme, basil, oregano, salt, and pepper. Bring the mixture to a simmer.
- While the broth is simmering, shred the cooked chicken into bite-sized pieces.
- Add the shredded chicken back to the pot. Let it simmer for an additional 10 minutes.
- Reduce the heat to low and stir in the heavy cream until well combined.
- Toss in the fresh spinach and cook until wilted, about 2-3 minutes.
- If desired, add cooked rice or pasta before serving.

- This soup can be stored in the refrigerator for up to 3 days.
- You can substitute the heavy cream with a lighter alternative if preferred.
