Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 3 medium carrots, sliced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 1 cup cooked rice or pasta (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chicken breasts and cook for about 5-7 minutes on each side, until golden brown. Remove the chicken and set aside.
  3. In the same pot, add the onion, garlic, carrots, and celery. Sauté for 5-6 minutes until softened.
  4. Pour in the chicken broth, stirring well to combine.
  5. Add the thyme, basil, oregano, salt, and pepper. Bring the mixture to a simmer.
  6. While the broth is simmering, shred the cooked chicken into bite-sized pieces.
  7. Add the shredded chicken back to the pot. Let it simmer for an additional 10 minutes.
  8. Reduce the heat to low and stir in the heavy cream until well combined.
  9. Toss in the fresh spinach and cook until wilted, about 2-3 minutes.
  10. If desired, add cooked rice or pasta before serving.
