- 8 cups chicken broth
- 2 cups egg noodles

- 1 teaspoon dried oregano
- Salt and pepper to taste

Instructions
- Season the chicken breasts with salt, pepper, and dried herbs.
- In a large pot, heat olive oil over medium heat. Add the onions, carrots, and celery. Sauté for about 5 minutes until softened.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Pour in the chicken broth and add the seasoned chicken breasts. Bring to a boil, then reduce to a simmer.
- Cover and let the soup simmer for about 20-25 minutes, or until the chicken is cooked through.
- Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot.
- Stir in the egg noodles and continue to simmer for an additional 10-15 minutes, or until the noodles are tender.
- Taste and adjust seasoning with more salt, pepper, or herbs if needed.
- Ladle the soup into bowls and garnish with fresh parsley.
