These delicate molasses buttercream macarons combine classic French almond meringue shells with warm spices and creamy molasses buttercream.


Ingredients

  • 1 teaspoon cinnamon
  • ½ teaspoon ground ginger
  • ½ teaspoon ground cloves
  • 100 grams egg whites (about 3 large), at room temperature
  • 110 grams super fine white sugar (about 1 cup + 2 teaspoons)
  • 12 teaspoons brown gel food coloring (Chefmaster Buckeye Brown recommended)
  • 57 grams (2 ounces) white chocolate, melted
  • 2 tablespoons gingerbread men sprinkles
  • ½ cup (114 grams) unsalted butter, softened
  • 1 ¾ cups (210 grams) confectioners’ sugar
  • 1 tablespoon (20 grams) fancy molasses
  • 1 teaspoon vanilla extract

Instructions

  1. Sift almond flour and confectioners’ sugar into a bowl; add spices and whisk.
  2. Beat egg whites in a stand mixer until soft peaks form, then gradually add sugar and whip until stiff peaks form.
  3. Fold dry ingredients into meringue gently until combined.
  4. Pipe batter into circles on a baking sheet and tap to release air bubbles.
  5. Let shells rest until a dry skin forms.
  6. Preheat oven to 300°F (150°C) and bake for 15-20 minutes until firm.
  7. Melt white chocolate and drizzle over half of the cooled shells; sprinkle with gingerbread sprinkles.
  8. Beat butter and confectioners’ sugar with molasses and vanilla until creamy.
  9. Pipe buttercream onto macaron halves and sandwich with tops.
  10. Refrigerate assembled macarons overnight for optimal flavor and texture.
