- 2 cups (180 g) quick oats
- ½ cup (120 ml) honey or maple syrup
- ½ cup (120 g) nut butter (peanut or almond)
- Zest and juice of 1 lemon
- 1 tsp (5 g) vanilla extract
- ¼ cup (30 g) shredded coconut (optional)
Instructions
- In a large mixing bowl, combine the honey (or maple syrup), nut butter, lemon juice, and lemon zest. Stir with a spatula until fully blended, about 2 minutes.
- Add the quick oats and shredded coconut (if using) into the wet mixture. Stir until the oats are evenly coated, about another 2 minutes.
- Using your hands or a cookie scoop, form the mixture into small balls or patties, roughly 1 inch (2.5 cm) wide. Place them on a lined baking sheet or plate.
- Refrigerate the cookies for at least 30 minutes to help them firm up.
- Remove the cookies from the fridge. Enjoy them chilled or at room temperature.
