Description

Quick and easy lemon cake mix cookies, soft and chewy with a burst of zesty flavor.


Ingredients

  • 1 box (432 g / 15.25 oz) lemon cake mix
  • 226 g (8 oz) cream cheese, softened
  • 120 ml (½ cup) vegetable oil
  • 2 large eggs
  • Zest from 1 lemon
  • Powdered sugar (for rolling)

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, combine cake mix, softened cream cheese, vegetable oil, eggs, and lemon zest. Mix until a thick dough forms.
  3. Chill the dough in the refrigerator for about 10–15 minutes.
  4. Prepare a plate with powdered sugar. Using a cookie scoop, portion out 2 tablespoons of dough and roll in powdered sugar.
  5. Place cookies on a baking sheet lined with parchment paper, spaced 5 cm (2 inches) apart, and bake for 10–12 minutes.
  6. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Don’t overmix the dough. Chilling helps maintain shape. Optional to add chocolate chips or nuts.
