- 215 g Light Brown Sugar
- 5 Tbsp Unsalted Butter, cold, cut into cubes
- 1/4 tsp Kosher Salt
- 2 1/2 cups Potato Sticks
- 100 g Granulated Sugar
- 65 g Powdered Sugar
- 1/4 tsp Ground Cinnamon
- 1 1/2 tsp Vanilla Extract
- 270 g All-Purpose Flour
Instructions
- In a saucepan, combine apple cider, light brown sugar, butter, and salt. Cook over medium heat until the mixture thickens and coats the back of a spoon, about 5-7 minutes. Set aside to cool.
- In a large mixing bowl, combine potato sticks, granulated sugar, powdered sugar, cold butter, and vanilla extract. Mix until the ingredients resemble a crumbly texture, about 2-3 minutes.
- Gradually add the all-purpose flour, mixing until a dough forms. The dough should feel slightly sticky but still manageable—if it’s too wet, add a touch more flour.
- Cover the bowl with plastic wrap and refrigerate the dough for about 30 minutes.
- Preheat your oven to 350°F (175°C). Scoop portions of dough, about one tablespoon each, onto a lined baking sheet, spacing them evenly about 2 inches apart.
- Bake for 12-15 minutes, or until the edges turn golden brown.
- Once cooled to room temperature, drizzle the apple caramel generously over the tops of each cookie before serving.
