  • 2 1/2 cups Potato Sticks
  • 100 g Granulated Sugar
  • 65 g Powdered Sugar
  • 1/4 tsp Ground Cinnamon
  • 1 1/2 tsp Vanilla Extract
  • 270 g All-Purpose Flour

Instructions

  1. In a saucepan, combine apple cider, light brown sugar, butter, and salt. Cook over medium heat until the mixture thickens and coats the back of a spoon, about 5-7 minutes. Set aside to cool.
  2. In a large mixing bowl, combine potato sticks, granulated sugar, powdered sugar, cold butter, and vanilla extract. Mix until the ingredients resemble a crumbly texture, about 2-3 minutes.
  3. Gradually add the all-purpose flour, mixing until a dough forms. The dough should feel slightly sticky but still manageable—if it’s too wet, add a touch more flour.
  4. Cover the bowl with plastic wrap and refrigerate the dough for about 30 minutes.
  5. Preheat your oven to 350°F (175°C). Scoop portions of dough, about one tablespoon each, onto a lined baking sheet, spacing them evenly about 2 inches apart.
  6. Bake for 12-15 minutes, or until the edges turn golden brown.
  7. Once cooled to room temperature, drizzle the apple caramel generously over the tops of each cookie before serving.
