Description

A moist and easy banana bread loaf that delivers comforting flavors with a perfectly caramelized top.


Ingredients

Scale
  • 250 g (2 cups) all-purpose flour
  • 5 g (1 tsp) baking soda
  • 6 g (1 tsp) fine salt
  • 150 g (3/4 cup) granulated sugar
  • 115 g (1/2 cup / 1 stick) unsalted butter, softened
  • 2 large eggs, room temperature
  • 360 g (3 medium to large) ripe bananas, mashed
  • 60 ml (1/4 cup) sour cream or plain Greek yogurt
  • 5 ml (1 tsp) pure vanilla extract
  • Optional: 75 g (1/2 cup) chopped walnuts or chocolate chips

Instructions

  1. Preheat the oven to 175°C (350°F). Butter a 9 x 5-inch loaf pan and line it with parchment.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. Beat the butter and sugar together for 1–2 minutes until fluffy.
  4. Add the eggs one at a time, mixing after each addition. Stir in vanilla.
  5. Fold in the mashed bananas and sour cream until combined.
  6. Add the dry ingredients in two additions, folding gently. Add optional mix-ins if desired.
  7. Spoon the batter into the prepared pan and bake for 55–65 minutes.
  8. Let the loaf cool in the pan for 10 minutes, then cool completely on a rack before slicing.

Notes

Use very ripe bananas for the best flavor and avoid overbaking.
