A moist and easy banana bread loaf that delivers comforting flavors with a perfectly caramelized top.

- 250 g (2 cups) all-purpose flour
- 5 g (1 tsp) baking soda
- 6 g (1 tsp) fine salt
- 150 g (3/4 cup) granulated sugar
- 115 g (1/2 cup / 1 stick) unsalted butter, softened
- 2 large eggs, room temperature
- 360 g (3 medium to large) ripe bananas, mashed
- 60 ml (1/4 cup) sour cream or plain Greek yogurt
- 5 ml (1 tsp) pure vanilla extract
- Optional: 75 g (1/2 cup) chopped walnuts or chocolate chips
Instructions
- Preheat the oven to 175°C (350°F). Butter a 9 x 5-inch loaf pan and line it with parchment.
- In a medium bowl, whisk together the flour, baking soda, and salt.
- Beat the butter and sugar together for 1–2 minutes until fluffy.
- Add the eggs one at a time, mixing after each addition. Stir in vanilla.
- Fold in the mashed bananas and sour cream until combined.
- Add the dry ingredients in two additions, folding gently. Add optional mix-ins if desired.
- Spoon the batter into the prepared pan and bake for 55–65 minutes.
- Let the loaf cool in the pan for 10 minutes, then cool completely on a rack before slicing.
Notes
Use very ripe bananas for the best flavor and avoid overbaking.
