- 2 slices sourdough or favorite bread
- 1 ripe avocado
- 2 Tbsp pesto (store-bought or homemade)
- Salt, to taste
- Black pepper, to taste
- Optional toppings: chili flakes, lemon zest, microgreens, grated Parmesan
Instructions
- Bring a saucepan of water to a gentle boil. Add eggs and cook for exactly 7 minutes for a jammy center.
- Transfer eggs to an ice bath for 5 minutes, then peel carefully.
- Toast bread slices until golden and crisp.
- Scoop avocado into a bowl, mash lightly, and season with salt and pepper.
- Spread avocado on toast, spoon pesto on top, then halve eggs and place over toast.
- Garnish with optional toppings and serve immediately.
