- 8 cups stale bread cubes (sourdough or French)
- 1/2 cup unsalted butter
- 1 medium onion, diced
- 2 cups celery, chopped
- 1/4 cup fresh thyme, chopped

- 2 large eggs, beaten

Instructions
- Preheat your oven to 350°F (175°C).
- If using fresh bread, cube it and let it sit out for an hour to slightly dry.
- In a large skillet over medium heat, melt the butter. Add onions and celery; sauté until soft (about 5 minutes).
- In a large bowl, mix stale bread with sautéed vegetables, fresh herbs, salt, and pepper.
- Pour in chicken broth until moistened but not soggy. Add beaten eggs and mix well.
- Transfer to a greased baking dish and bake uncovered for 30-40 minutes until golden brown.
