Ingredients

  • 1 can crushed pineapple (20 oz, drained)
  • 8 oz cream cheese (softened)
  • 2 cups powdered sugar (sifted)
  • 1 cup chopped pecans (lightly toasted)
  • 3 large eggs
  • 1 tsp vanilla extract
  • ½ cup unsalted butter (softened)

Instructions

  1. Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, mix yellow cake mix, drained pineapple, eggs, and vanilla until smooth.
  3. Pour batter into prepared pans and bake for 25-30 minutes until a toothpick comes out clean. Cool for 10 minutes before transferring to wire racks.
  4. For frosting, beat cream cheese and butter until fluffy. Gradually add powdered sugar until smooth.
  5. Assemble by layering one cake on a platter, spreading frosting on top, adding pecans, then placing the second layer on top. Frost the top and decorate with remaining pecans.
