- 1 box yellow cake mix (15.25 oz)
- 1 can crushed pineapple (20 oz, drained)
- 8 oz cream cheese (softened)
- 2 cups powdered sugar (sifted)
- 1 cup chopped pecans (lightly toasted)
- 3 large eggs
- 1 tsp vanilla extract
- ½ cup unsalted butter (softened)
Instructions
- Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a large bowl, mix yellow cake mix, drained pineapple, eggs, and vanilla until smooth.
- Pour batter into prepared pans and bake for 25-30 minutes until a toothpick comes out clean. Cool for 10 minutes before transferring to wire racks.
- For frosting, beat cream cheese and butter until fluffy. Gradually add powdered sugar until smooth.
- Assemble by layering one cake on a platter, spreading frosting on top, adding pecans, then placing the second layer on top. Frost the top and decorate with remaining pecans.
