Description
Honey Lime Chicken Skillet is a delicious and easy-to-make dish featuring juicy bone-in, skin-on chicken thighs cooked to golden perfection in a skillet.

- 2 Limes (zested and juiced)
- 3 tbsp Honey
- 1 tbsp Soy Sauce
- 8 Chicken Thighs (Bone-in and Skin-on; may substitute with 4 Leg Quarters)
- 1 tsp Coarse Salt
- 1/2 tsp Pepper
- 3 tbsp Olive Oil
- 2 Green Onions (chopped)
- Lime slices (optional garnish)
Instructions
- Zest 2 limes and place the zest in a small bowl. Slice the limes in half and squeeze out the juice into the same bowl. Add 3 tablespoons of honey and 1 tablespoon of soy sauce, then stir well to combine.
- Pat the chicken thighs dry with paper towels and trim any excess skin. Sprinkle 1 teaspoon of coarse salt and 1/2 teaspoon of pepper evenly over both sides of the chicken.
- Heat 3 tablespoons of olive oil in a 10-12 inch heavy skillet over medium-high heat for 1 to 2 minutes. Place the chicken thighs skin side down in the skillet and cook for about 5 minutes, or until the skin is a dark golden brown. Make sure the chicken pieces are not sticking to the pan while browning.
- While the chicken is browning, chop 2 green onions and slice additional lime for garnish if desired.
- Flip the chicken thighs so the cooked skin side is facing up. Pour the honey-lime mixture evenly over the chicken pieces. Reduce the heat to low, cover the skillet, and cook for an additional 14 to 18 minutes until the chicken is fully cooked and reaches an internal temperature of 180°F.
- Transfer the chicken to serving plates, drizzle with the pan juices, and garnish with chopped green onions and lime slices. Serve hot with your favorite sides and enjoy!
