Heavenly White Chicken Lasagna Soup is a comforting and delicious twist on traditional lasagna, packed with chicken, cheese, and spinach.

- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 pound boneless, skinless chicken breasts, diced
- 4 cups chicken broth
- 1 teaspoon dried Italian seasoning
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup heavy cream
- 8 ounces lasagna noodles, broken into pieces
- 2 cups fresh spinach
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- Fresh basil, for garnish (optional)
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion and minced garlic to the pot. Sauté until the onion becomes translucent, about 3-4 minutes.
- Add the diced chicken to the pot. Cook until the chicken is no longer pink, approximately 5-7 minutes.
- Pour in the chicken broth. Stir in the Italian seasoning, salt, and black pepper. Bring the mixture to a boil.
- Once boiling, reduce the heat to medium-low and stir in the heavy cream.
- Add the broken lasagna noodles to the pot. Allow them to cook for about 10 minutes, or until they are tender.
- Stir in the fresh spinach and cook until wilted, about 2 minutes.
- Remove the pot from heat and stir in the ricotta, mozzarella, and Parmesan cheese until melted and well combined.
- Taste the soup and adjust the seasoning if necessary.
- Ladle the soup into bowls and garnish with fresh basil if desired.
Notes
- For a richer flavor, use homemade chicken broth.
- Feel free to add other vegetables like mushrooms or bell peppers.
