Description

Heavenly White Chicken Lasagna Soup is a comforting and delicious twist on traditional lasagna, packed with chicken, cheese, and spinach.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 pound boneless, skinless chicken breasts, diced
  • 4 cups chicken broth
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup heavy cream
  • 8 ounces lasagna noodles, broken into pieces
  • 2 cups fresh spinach
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Fresh basil, for garnish (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and minced garlic to the pot. Sauté until the onion becomes translucent, about 3-4 minutes.
  3. Add the diced chicken to the pot. Cook until the chicken is no longer pink, approximately 5-7 minutes.
  4. Pour in the chicken broth. Stir in the Italian seasoning, salt, and black pepper. Bring the mixture to a boil.
  5. Once boiling, reduce the heat to medium-low and stir in the heavy cream.
  6. Add the broken lasagna noodles to the pot. Allow them to cook for about 10 minutes, or until they are tender.
  7. Stir in the fresh spinach and cook until wilted, about 2 minutes.
  8. Remove the pot from heat and stir in the ricotta, mozzarella, and Parmesan cheese until melted and well combined.
  9. Taste the soup and adjust the seasoning if necessary.
  10. Ladle the soup into bowls and garnish with fresh basil if desired.
