- 1 lb ground turkey
- 1 cup brown or green lentils, rinsed
- 2 medium carrots, diced
- 2 stalks celery, diced
- 1 yellow onion, chopped
- 3 garlic cloves, minced
- 4 cups low-sodium vegetable broth
- 2 tsp ground cumin
- 1 bay leaf
- 2 cups fresh spinach (optional)
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onions until translucent; add garlic and cook until golden.
- Add ground turkey, breaking it apart with a spoon. Cook until browned (5–7 minutes).
- Stir in lentils, carrots, celery, cumin, salt, and pepper. Cook for 2 minutes.
- Pour in vegetable broth and add bay leaf; bring to boil then reduce heat to simmer for 25–30 minutes until lentils are tender.
- Optional: Stir in spinach during the last few minutes until wilted.
- Remove from heat, discard bay leaf, and serve hot.
