  • 2 cups baby spinach or kale
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil
  • Grated Parmesan cheese, for serving (optional)
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it up with a spoon as it cooks (about 5-7 minutes).
  2. Add the chopped onion and minced garlic to the pot. Cook for an additional 3-4 minutes until the onion is translucent and fragrant.
  3. Stir in the diced potatoes, chicken broth, and canned tomatoes (with their juice). Bring the mixture to a boil.
  4. Add the dried Italian seasoning, salt, and black pepper. Reduce heat to low and let it simmer for about 20-25 minutes, or until the potatoes are tender.
  5. Stir in the baby spinach or kale and cook for another 5 minutes until the greens are wilted.
  6. Taste the soup and adjust seasoning as necessary. Add more salt or pepper if desired.
  7. Ladle the soup into bowls and top with grated Parmesan cheese and fresh parsley, if using.
