- 1 pound Italian sausage (mild or spicy, based on preference)
- 4 medium potatoes, diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes, undrained
- 2 cups baby spinach or kale
- 1 teaspoon dried Italian seasoning
- 1 teaspoon salt (adjust to taste)
- ½ teaspoon black pepper
- 1 tablespoon olive oil
- Grated Parmesan cheese, for serving (optional)
- Fresh parsley, chopped, for garnish (optional)
Instructions
- In a large pot, heat olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it up with a spoon as it cooks (about 5-7 minutes).
- Add the chopped onion and minced garlic to the pot. Cook for an additional 3-4 minutes until the onion is translucent and fragrant.
- Stir in the diced potatoes, chicken broth, and canned tomatoes (with their juice). Bring the mixture to a boil.
- Add the dried Italian seasoning, salt, and black pepper. Reduce heat to low and let it simmer for about 20-25 minutes, or until the potatoes are tender.
- Stir in the baby spinach or kale and cook for another 5 minutes until the greens are wilted.
- Taste the soup and adjust seasoning as necessary. Add more salt or pepper if desired.
- Ladle the soup into bowls and top with grated Parmesan cheese and fresh parsley, if using.

- This soup can be stored in the refrigerator for up to 3 days.
- For a thicker soup, mash some of the potatoes before serving.
