Healthy Strawberry Oatmeal Bars are a nutritious treat for any time of day.
Ingredients

- 2 cups rolled oats
- 1 cup whole wheat flour (or almond flour for a gluten-free option)
- 1/2 cup honey (or maple syrup)
- 1/2 cup unsweetened applesauce
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 cup fresh strawberries (hulled and sliced)
- 1 tablespoon lemon juice (optional, for added flavor)
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper.
- In a large bowl, combine the rolled oats, whole wheat flour, baking powder, baking soda, cinnamon, and salt.
- In another bowl, whisk together the honey (or maple syrup), applesauce, and lemon juice until well combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Spread half of the oatmeal mixture evenly in the bottom of the prepared baking dish.
- Layer the sliced strawberries over the oatmeal base.
- Crumble the remaining oatmeal mixture on top of the strawberries, pressing down gently.
- Bake in the preheated oven for 25–30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
- Allow the bars to cool in the baking dish for about 10 minutes, then transfer to a wire rack to cool completely.
- Once cooled, slice into bars and serve. Store any leftovers in an airtight container.

- Feel free to substitute the sweetener with your preferred option.
