A moist and delicious healthy vegan banana bread recipe that is also gluten-free. This recipe uses ripe bananas for natural sweetness and is perfect for a guilt-free indulgence or a quick snack.

- 3 Ripe Bananas
- 1 cup Coconut Sugar
- 1/4 cup Maple Syrup
- 1/2 cup Non-Dairy Milk
- 1 tsp Vanilla Extract
- 1 tbsp Apple Cider Vinegar
- 1/4 cup Coconut Oil
- 1 1/2 cups Oat Flour
- 1 tbsp Baking Powder
- 1 tsp Baking Soda
- 1 tsp Cinnamon
- 1/2 tsp Salt
- 1/2 cup Vegan Chocolate Chips (Optional)
- 1/2 cup Walnuts (Optional)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9×5 inch loaf pan by lining it with parchment paper.
- In a large mixing bowl, combine mashed ripe bananas, coconut sugar, maple syrup, non-dairy milk, melted coconut oil, vanilla extract, and apple cider vinegar. Whisk until smooth.
- Add the dry ingredients: oat flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Mix until just combined.
- Fold in vegan chocolate chips and walnuts, if using.
- Pour the batter into the prepared loaf pan and sprinkle additional chocolate chips and walnuts on top if desired.
- Bake for 60-65 minutes, or until a toothpick inserted in the center comes out clean.
- Cool the bread in the pan for 15 minutes before transferring to a wire rack to cool completely.
Notes
- Serve warm with vegan butter or nut butter for an extra indulgent experience.
- For best results, use very ripe bananas.
