Description

A moist and delicious healthy vegan banana bread recipe that is also gluten-free. This recipe uses ripe bananas for natural sweetness and is perfect for a guilt-free indulgence or a quick snack.


Ingredients

  • 3 Ripe Bananas
  • 1 cup Coconut Sugar
  • 1/4 cup Maple Syrup
  • 1/2 cup Non-Dairy Milk
  • 1 tsp Vanilla Extract
  • 1 tbsp Apple Cider Vinegar
  • 1/4 cup Coconut Oil
  • 1 1/2 cups Oat Flour
  • 1 tbsp Baking Powder
  • 1 tsp Baking Soda
  • 1 tsp Cinnamon
  • 1/2 tsp Salt
  • 1/2 cup Vegan Chocolate Chips (Optional)
  • 1/2 cup Walnuts (Optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×5 inch loaf pan by lining it with parchment paper.
  2. In a large mixing bowl, combine mashed ripe bananas, coconut sugar, maple syrup, non-dairy milk, melted coconut oil, vanilla extract, and apple cider vinegar. Whisk until smooth.
  3. Add the dry ingredients: oat flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Mix until just combined.
  4. Fold in vegan chocolate chips and walnuts, if using.
  5. Pour the batter into the prepared loaf pan and sprinkle additional chocolate chips and walnuts on top if desired.
  6. Bake for 60-65 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool the bread in the pan for 15 minutes before transferring to a wire rack to cool completely.

  • Serve warm with vegan butter or nut butter for an extra indulgent experience.
  • For best results, use very ripe bananas.
