Ingredients

- 250 g (2 cups) all-purpose flour
- 10 g (2 tsp) baking powder
- 5 g (1 tsp) cinnamon
- a pinch of salt
- 120 g (½ cup) Greek yogurt
- 60 ml (¼ cup) honey
- 1 large egg
- 30 g (2 tbsp) coconut oil
- 50 g (¼ cup) sugar (for coating)
- 10 g (2 tsp) cinnamon (for coating)
Instructions
- In a medium bowl, whisk together the flour, baking powder, cinnamon, and salt.
- In a large bowl, mix the Greek yogurt, honey, and egg until smooth and well integrated.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
- Drop tablespoon-sized portions of dough onto the prepared sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes or until golden brown and springy to the touch.
- Toss the warm bites in a mixture of sugar and cinnamon until well-coated.
Notes
Use a piping bag for uniform sizes and shapes and store in an airtight container for up to 3 days.
