A hearty and flavorful veggie lasagna layered with fresh vegetables and creamy cheese.
Ingredients

- 9 lasagna noodles
- 2 cups marinara sauce
- 1 zucchini, sliced
- 1 bell pepper, diced
- 2 cups spinach
- 1 cup ricotta cheese
- 2 cups shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions; drain.
- In a skillet, heat olive oil over medium heat, then sauté garlic, zucchini, and bell pepper until tender.
- Add spinach and cook until wilted. Season with salt and pepper.
- In a baking dish, spread a layer of marinara sauce, followed by 3 noodles, half of the ricotta cheese, half of the sautéed vegetables, and one-third of the mozzarella.
- Repeat the layers, ending with noodles topped with marinara sauce and remaining mozzarella and Parmesan cheese.
- Cover with aluminum foil and bake for 25 minutes, then uncover and bake for another 15 minutes.
- Let it cool for a few minutes before slicing and serving.
Notes
Feel free to add your favorite vegetables or swap ricotta for cottage cheese!
