- 1 pound ground beef
- 1 pound Italian sausage, casings removed
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced (any color)
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 can (15 oz) kidney beans, rinsed and drained
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup beef broth
- 2 tablespoons chili powder
- 1 tablespoon cumin
- 1 teaspoon smoked paprika
- 1 teaspoon oregano
- Salt and pepper to taste
- 1 cup sharp cheddar cheese, shredded
- 1 cup sliced pepperoni
- Fresh parsley or cilantro for garnish (optional)
- Sour cream for serving (optional)
- Crusty bread for dipping (optional)
Instructions
- In a skillet over medium heat, brown the ground beef and Italian sausage until fully cooked. Drain excess fat.
- Add the diced onion, garlic, and bell pepper to the skillet. Cook for 2-3 minutes until softened.
- In the slow cooker, combine the cooked meat mixture, diced tomatoes, kidney beans, black beans, and beef broth.
- Stir in the chili powder, cumin, smoked paprika, oregano, salt, and pepper. Mix well to combine.
- Cover the slow cooker and set it to low for 7-8 hours or high for 4-5 hours.
- About 30 minutes before serving, stir in the shredded cheddar cheese and sliced pepperoni. Allow to melt and blend into the chili.
- Before serving, taste the chili and adjust the seasonings as needed.
- If desired, garnish with fresh parsley or cilantro for a pop of color and flavor.
