Description

Gourmet Slow Cooker Charcuterie Chili is a hearty and flavorful dish perfect for gatherings.


Ingredients

  • 1 pound ground beef
  • 1 pound Italian sausage, casings removed
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced (any color)
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 can (15 oz) kidney beans, rinsed and drained
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup beef broth
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup sliced pepperoni
  • Fresh parsley or cilantro for garnish (optional)
  • Sour cream for serving (optional)
  • Crusty bread for dipping (optional)

Instructions

  1. In a skillet over medium heat, brown the ground beef and Italian sausage until fully cooked. Drain excess fat.
  2. Add the diced onion, garlic, and bell pepper to the skillet. Cook for 2-3 minutes until softened.
  3. In the slow cooker, combine the cooked meat mixture, diced tomatoes, kidney beans, black beans, and beef broth.
  4. Stir in the chili powder, cumin, smoked paprika, oregano, salt, and pepper. Mix well to combine.
  5. Cover the slow cooker and set it to low for 7-8 hours or high for 4-5 hours.
  6. About 30 minutes before serving, stir in the shredded cheddar cheese and sliced pepperoni. Allow to melt and blend into the chili.
  7. Before serving, taste the chili and adjust the seasonings as needed.
  8. If desired, garnish with fresh parsley or cilantro for a pop of color and flavor.
