Ingredients

  • 2 cups mashed potatoes (prepared, preferably chilled)
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1/4 cup green onions (chopped, optional)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper (to taste)
  • 1/2 cup breadcrumbs (for coating)
  • Cooking spray or olive oil (for greasing)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray or olive oil.
  2. In a large bowl, combine the chilled mashed potatoes, shredded cheddar cheese, grated Parmesan cheese, eggs, green onions (if using), garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. Using a spoon or your hands, scoop out portions of the potato mixture and shape them into small balls or mounds, about the size of a golf ball.
  4. Roll each puff in breadcrumbs to coat.
  5. Place the coated potato puffs on the prepared baking sheet, spacing them evenly apart.
  6. Bake in the preheated oven for 25–30 minutes, or until the puffs are golden brown and crispy on the outside.
  7. Allow the puffs to cool for a few minutes before serving. Enjoy them warm as a side dish or appetizer.
