- 2 cups mashed potatoes (prepared, preferably chilled)
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 2 large eggs
- 1/4 cup green onions (chopped, optional)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper (to taste)
- 1/2 cup breadcrumbs (for coating)
- Cooking spray or olive oil (for greasing)
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray or olive oil.
- In a large bowl, combine the chilled mashed potatoes, shredded cheddar cheese, grated Parmesan cheese, eggs, green onions (if using), garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Using a spoon or your hands, scoop out portions of the potato mixture and shape them into small balls or mounds, about the size of a golf ball.
- Roll each puff in breadcrumbs to coat.
- Place the coated potato puffs on the prepared baking sheet, spacing them evenly apart.
- Bake in the preheated oven for 25–30 minutes, or until the puffs are golden brown and crispy on the outside.
- Allow the puffs to cool for a few minutes before serving. Enjoy them warm as a side dish or appetizer.
