- 1 cup brewed coffee
- 1/4 cup sugar
- 1 tablespoon gelatin
- 2 tablespoons cold water
- 3 egg yolks
- 1 teaspoon vanilla extract
- 1 teaspoon gingerbread spice mix (ginger, cinnamon, nutmeg)
- 1 cup heavy cream
- 3 egg whites
- Melted chocolate for glazing
Instructions
- In a saucepan, combine brewed coffee and sugar, heating gently until sugar dissolves (5 minutes).
- In a small bowl, sprinkle gelatin over cold water and let bloom (5 minutes).
- Whisk egg yolks and vanilla in a mixing bowl, then slowly mix in the coffee mixture (5 minutes).
- Stir in bloomed gelatin and spice mix until fully incorporated (5 minutes).
- In a separate bowl, whip heavy cream to soft peaks (10 minutes).
- Fold whipped cream into the coffee mixture gently (10 minutes).
- Beat egg whites until stiff peaks form, then fold into the mixture (10 minutes).
- Pour mixture into silicone dome molds and freeze until set, approximately 3-4 hours (Note: Overnight is even better!).
- Once set, dip in melted chocolate glaze and chill until ready to serve (15 minutes).
Notes
Feel free to adjust spices and use different molds for a personal touch. Ensure gelatin blooms correctly to prevent setting issues.
