- ½ cup unsalted butter, softened
- 1 tsp vanilla extract
- Pinch of fine salt
- 3½ to 4 cups powdered sugar, as needed
- 1½ to 2 cups crisp rice cereal or cornflakes (optional for crunch)
- 12 to 16 oz white chocolate (melting wafers or chips)
- Candy eyes, as needed
Instructions
- Combine peanut butter, softened butter, vanilla extract, and salt until smooth.
- Gradually beat in powdered sugar in two additions until a cohesive, rollable dough forms.
- If using, fold in crisp rice cereal or cornflakes.
- Scoop 1-tablespoon portions and roll them into balls or ghost-like mounds.
- Place the rolled dough on a parchment-lined tray and chill for 30–60 minutes until firm.
- Gently melt the white chocolate using short bursts in the microwave or a double boiler until smooth and fluid.
- Spoon or dip each chilled dough ball to fully coat it in melted white chocolate, allowing some to drip down the sides to create a ghost effect.
- While the chocolate is still tacky, press candy eyes onto each ghost.
- Chill the Ghostly Peanut Butter Balls until the chocolate coating is set.
- Serve slightly cool for the best texture.
Notes
- If the dough crumbles, gently knead it or add 1–2 teaspoons of peanut butter. If the dough is too soft, add more powdered sugar or chill it for a longer period.
- For a classic peanut butter ball, swap white chocolate for milk or dark chocolate.
- To make buckeyes, dip the balls about ¾ of the way, leaving a circular peanut butter center exposed on top.
- Store finished candies in an airtight container in the refrigerator.
