- 1 kg (2.2 lbs) chicken thighs
- 100 g (½ cup) unsalted butter
- 8 cloves garlic, minced
- 2 tbsp fresh thyme (or 1 tbsp dried thyme)
- 250 ml (1 cup) chicken broth
- Salt and pepper to taste
- 1 lemon, juiced
Instructions
- Heat your skillet over medium-high heat. Melt 50 g (¼ cup) of the butter. Once melted, add the chicken thighs skin-side down. Sear for 5–7 minutes until golden brown. Flip and sear the other side for another 5 minutes. Transfer the chicken to a plate.
- In the same skillet, add the remaining butter and minced garlic. Sauté for 1–2 minutes until fragrant and slightly golden.
- Return the chicken to the skillet. Pour in the chicken broth and squeeze in the lemon juice. Add thyme, salt, and pepper. Ensure the chicken is well-coated.
- Cover the skillet with a lid. Reduce heat to low and cook for 6 hours.
- Once cooked thoroughly, the chicken should shred easily with a fork. Serve over rice, noodles, or alongside your favorite vegetables.
