Ingredients

  • 1 kg (2.2 lbs) chicken thighs
  • 100 g (½ cup) unsalted butter
  • 8 cloves garlic, minced
  • 2 tbsp fresh thyme (or 1 tbsp dried thyme)
  • 250 ml (1 cup) chicken broth
  • Salt and pepper to taste
  • 1 lemon, juiced

Instructions

  1. Heat your skillet over medium-high heat. Melt 50 g (¼ cup) of the butter. Once melted, add the chicken thighs skin-side down. Sear for 5–7 minutes until golden brown. Flip and sear the other side for another 5 minutes. Transfer the chicken to a plate.
  2. In the same skillet, add the remaining butter and minced garlic. Sauté for 1–2 minutes until fragrant and slightly golden.
  3. Return the chicken to the skillet. Pour in the chicken broth and squeeze in the lemon juice. Add thyme, salt, and pepper. Ensure the chicken is well-coated.
  4. Cover the skillet with a lid. Reduce heat to low and cook for 6 hours.
  5. Once cooked thoroughly, the chicken should shred easily with a fork. Serve over rice, noodles, or alongside your favorite vegetables.
