A creamy, spicy white chicken chili that’s perfect for family dinners, quick to prepare, and loaded with flavor.

- 450 g (1 lb) cooked, shredded chicken
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 can (400 g or 15 oz) white beans (like cannellini)
- 2 cans (200 g or 7 oz) green chilies
- 950 ml (4 cups) chicken broth
- 240 g (8 oz) cream cheese
- 1 tsp cumin
- 1 tsp chili powder
- Juice of 1 lime
Instructions
- Heat 1 tablespoon of oil in a large pot over medium heat. Add the diced onion and sauté for 5 minutes until translucent. Stir in minced garlic and cook for another minute.
- Add the shredded chicken, cumin, and chili powder to the pot. Stir and cook for about 2 minutes until warmed through.
- Pour in chicken broth and add green chilies and white beans. Stir and bring to a gentle simmer.
- Once simmering, add cream cheese and stir until melted and fully combined.
- Squeeze lime juice into the chili, taste, and adjust seasoning. Simmer for an additional 10 minutes.
Notes
To adjust spice levels, add jalapeños or cayenne pepper. This chili can be made ahead and tastes even better the next day.
