  • 100 g (1/2 cup) light brown sugar, packed
  • 50 g (1 large) large egg
  • 10 ml (2 tsp) pure vanilla extract
  • 150 g (1 cup) optional mix-ins (chocolate chips, nuts, dried fruit)

Instructions

  1. Whisk together flour, baking soda, and salt in a medium bowl; set aside.
  2. In a large bowl, cream together butter, granulated sugar, and brown sugar until fluffy.
  3. Add egg and vanilla; mix until combined.
  4. Fold dry ingredients into wet until just combined, then add mix-ins.
  5. Scoop portions onto a baking sheet and chill for 20–30 minutes.
  6. Preheat oven to 175°C (350°F) and bake for 10–12 minutes until edges are golden.
  7. Let cookies cool on a rack for at least 20 minutes before storing.
