- 1 pound ground beef
- 2 cups cauliflower, riced
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 tablespoons taco seasoning
- 1 can (14.5 oz) diced tomatoes
- 1 cup shredded cheese (sharp cheddar or mozzarella)
- Lime juice (optional)
Instructions
- Preheat oven to 350°F (175°C).
- Rice the cauliflower (about 2 cups).
- Brown the ground beef in a skillet over medium heat, draining excess fat.
- Add chopped onion and bell pepper; sauté until softened.
- Stir in taco seasoning and diced tomatoes, and mix in the riced cauliflower.
- In a baking dish, layer half of the mixture and half of the cheese; repeat layers.
- Bake uncovered for 25-30 minutes until golden and bubbling.
- Let cool for a few minutes before serving.
Notes
Serve with a dollop of sour cream or avocado for added flavor. Adjust spices to your taste.
