Ingredients

  • 1 pound ground beef
  • 2 cups cauliflower, riced
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 tablespoons taco seasoning
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup shredded cheese (sharp cheddar or mozzarella)
  • Lime juice (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Rice the cauliflower (about 2 cups).
  3. Brown the ground beef in a skillet over medium heat, draining excess fat.
  4. Add chopped onion and bell pepper; sauté until softened.
  5. Stir in taco seasoning and diced tomatoes, and mix in the riced cauliflower.
  6. In a baking dish, layer half of the mixture and half of the cheese; repeat layers.
  7. Bake uncovered for 25-30 minutes until golden and bubbling.
  8. Let cool for a few minutes before serving.
