Delicious Brie Stuffed Chicken – Juicy, Easy & Flavor-Packed

- 4 large chicken breasts, boneless and skinless
- 6–8 oz (170–225 g) brie cheese, sliced
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2–3 cloves garlic, minced
- 1 tablespoon fresh thyme or parsley, chopped
- ½ teaspoon paprika
- Salt and pepper, to taste
- 1 tablespoon butter (for searing)
- Add spinach, sautéed before stuffing
- Replace brie with Camembert
- Add sun-dried tomatoes
- Add mushrooms, cooked until golden
- Use rosemary instead of thyme
- Add roasted red peppers
Instructions
- Slice a deep pocket into each chicken breast. Season inside and out with salt, pepper, and paprika.
- Fill each pocket with brie slices, garlic, onion, and fresh herbs. Secure with toothpicks if needed.
- Heat olive oil and butter in a skillet. Sear chicken 3–4 minutes per side until golden brown.
- Transfer to a baking dish and bake at 375°F (190°C) for 20–25 minutes, or until internal temperature reaches 165°F (74°C). Let rest 5 minutes before slicing.
