Instructions
- In a food processor, blend the pitted Medjool dates until they form a sticky paste.
- Mix in the peanut butter (or almond butter), maple syrup (or honey), and vanilla extract until well combined.
- Fold in the mixed nuts, ensuring they are evenly distributed throughout the date mixture.
- Line a small baking dish with parchment paper. Press the date and nut mixture into the dish, creating an even layer about 1/2 inch thick.
- Place the dish in the refrigerator for about 30 minutes to firm up the mixture.
- While the base is chilling, melt the dark chocolate chips in a microwave-safe bowl, stirring every 30 seconds until smooth.
- Remove the chilled date mixture from the refrigerator. Cut it into bars or squares and dip each piece into the melted chocolate, ensuring they are well-coated.
