- 8 ounces rotini or penne pasta
- 1 can (10 ounces) Rotel diced tomatoes with green chilies
- 1 cup heavy cream

- 1 teaspoon onion powder
- 1 teaspoon chili powder
- Salt and pepper to taste

Instructions
- In a large pot, boil water and cook the pasta according to package instructions until al dente. Drain and set aside.
- In the same pot, heat olive oil over medium heat. Add ground beef, breaking it apart as it cooks. Season with garlic powder, onion powder, chili powder, salt, and pepper. Cook until browned and no longer pink.
- Stir in the can of Rotel diced tomatoes with green chilies, including the juices. Cook for about 2-3 minutes, allowing the flavors to meld.
- Reduce the heat to low and pour in the heavy cream, stirring to combine. Allow it to simmer for 2-3 minutes until slightly thickened.
- Add the cooked pasta to the creamy beef mixture. Stir well to coat the pasta evenly with the sauce.
- Sprinkle shredded cheddar cheese over the pasta, stirring until the cheese is melted and incorporated into the sauce.
- Taste the dish and adjust seasoning if necessary, adding more salt, pepper, or spices to suit your preference.
- Remove from heat and let it sit for a minute before serving. Garnish with fresh cilantro or parsley if desired.
