- 1 medium onion, diced
- 2 cloves garlic, minced
- 3 cups chicken broth
- 2 cups heavy cream
- 1 cup diced tomatoes (canned or fresh)
- 2 cups kale or spinach, chopped
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for cooking
- Grated Parmesan cheese for serving (optional)
Instructions
- In a large pot, heat a tablespoon of olive oil over medium heat. Add the Italian sausage and cook until browned. Break it up with a spoon as it cooks.
- Add the diced onion, carrots, and celery to the pot. Sauté for about 5 minutes until the vegetables begin to soften. Then, stir in the minced garlic and cook for an additional minute.
- Pour in the chicken broth and diced tomatoes. Bring the mixture to a simmer.
- Once simmering, reduce the heat to low and stir in the heavy cream. Allow it to blend with the soup base.
- Sprinkle in the Italian seasoning, salt, and pepper. Adjust the seasoning to taste.
- Stir in the chopped kale or spinach, allowing it to wilt for about 3-4 minutes.
- Once everything is well combined and heated through, remove the soup from the heat.
- Ladle the soup into bowls and top with grated Parmesan cheese if desired.
