Instructions

  1. In a large pot, heat a tablespoon of olive oil over medium heat. Add the Italian sausage and cook until browned. Break it up with a spoon as it cooks.
  2. Add the diced onion, carrots, and celery to the pot. Sauté for about 5 minutes until the vegetables begin to soften. Then, stir in the minced garlic and cook for an additional minute.
