  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon Italian seasoning
  • 1 cup heavy cream
  • 2 cups spinach or kale
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, parsley, egg, minced garlic, Italian seasoning, salt, and pepper. Mix until just combined, then form into small meatballs.
  2. In a large pot, heat a tablespoon of olive oil over medium heat. Add the meatballs and cook until browned on all sides. Remove from the pot and set aside.
  3. In the same pot, add chopped onion, carrots, and celery. Sauté for about 5 minutes or until the vegetables soften. Add minced garlic and cook for an additional minute.
  4. Pour in the chicken broth and add the can of diced tomatoes. Stir in Italian seasoning and bring to a boil.
  5. Once boiling, reduce the heat to low and return the meatballs to the pot. Simmer for about 20 minutes to let the flavors meld.
  6. Stir in the heavy cream and spinach (or kale). Cook for an additional 5 minutes until the greens are wilted and the soup is heated through.
  7. Taste the soup and adjust seasoning with salt and pepper as needed.
