Savory Cranberry Brie Tart with Pancetta and Thyme is the ultimate holiday appetizer.
Ingredients

- 1 sheet frozen puff pastry, thawed in the fridge overnight
- 1 egg white, for brushing
- 1½ cups fresh cranberries
- ¼ cup water
- ½ cup brown sugar
- 3 sprigs fresh thyme
- 2 oz. diced pancetta
- 6 oz. brie cheese, sliced
Instructions
- In a saucepan, combine cranberries, water, brown sugar, and leaves from 2 thyme sprigs. Boil, then simmer for 2 minutes until the cranberries burst and thicken. Chill while prepping the rest.
- In a sauté pan, cook pancetta until crispy. Remove to a paper towel-lined plate.
- Preheat oven to 375°F (190°C). Fit puff pastry into a 14×5-inch tart pan. Prick with a fork and brush with egg white. Bake for 8 minutes until lightly golden.
- Spread cooled cranberry sauce over pastry, layer with brie slices, and sprinkle pancetta on top.
- Return to oven and bake for 15 minutes until golden and bubbly.
- Sprinkle with remaining thyme leaves, let rest a few minutes, then slice and serve warm.
