- 4 chicken breasts
- 200g brie cheese
- 200g fresh cranberries
- 2 tablespoons honey
- 1/4 cup orange juice
- 1 teaspoon cinnamon
- 1/2 teaspoon ginger
- Olive oil for cooking
- Panko breadcrumbs for topping
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a medium saucepan over medium heat.
- Add cranberries and cook until softened (about 5 minutes).
- Cut a pocket in each chicken breast and stuff with brie and cranberry mixture.
- Heat an oven-safe skillet and sear chicken for 2-3 minutes on each side.
- Top chicken with panko breadcrumbs and bake for 20-25 minutes until cooked through.
Notes
Let the chicken rest for 5 minutes before serving. Experiment with spices and additions as desired.
