  • 4 boneless, skinless chicken thighs
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup carrots, sliced
  • 1 can (14 oz) chickpeas, drained and rinsed
  • 1 can (14 oz) diced tomatoes
  • 2 teaspoons Moroccan spice blend (or a mix of cumin, coriander, and cinnamon)
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish (optional)

Instructions

  1. Dice the onion, mince the garlic, and slice the carrots. Set them aside.
  2. Sauté the Aromatics: In a large pot over medium heat, add a splash of oil. Once hot, add the diced onion and sauté until translucent, about 3-4 minutes.
  3. Add Garlic: Stir in the minced garlic and cook for another minute until fragrant.
  4. Brown the Chicken: Push the onions to the side of the pot and add the chicken thighs. Season with salt and pepper. Brown the chicken on both sides for about 5 minutes.
  5. Incorporate Vegetables: Add the sliced carrots and drained chickpeas to the pot, stirring well to combine.
  6. Add Tomatoes and Spices: Pour in the diced tomatoes and sprinkle the Moroccan spice blend over the top. Stir everything together to ensure the chicken and vegetables are coated in the spices.
  7. Simmer: Bring the mixture to a simmer. Cover the pot and reduce the heat to low. Allow it to cook for 25-30 minutes, or until the chicken is cooked through and tender.
