- 4 boneless, skinless chicken thighs
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup carrots, sliced
- 1 can (14 oz) chickpeas, drained and rinsed
- 1 can (14 oz) diced tomatoes
- 2 teaspoons Moroccan spice blend (or a mix of cumin, coriander, and cinnamon)
- Salt and pepper to taste
- Fresh cilantro or parsley for garnish (optional)
Instructions
- Dice the onion, mince the garlic, and slice the carrots. Set them aside.
- Sauté the Aromatics: In a large pot over medium heat, add a splash of oil. Once hot, add the diced onion and sauté until translucent, about 3-4 minutes.
- Add Garlic: Stir in the minced garlic and cook for another minute until fragrant.
- Brown the Chicken: Push the onions to the side of the pot and add the chicken thighs. Season with salt and pepper. Brown the chicken on both sides for about 5 minutes.
- Incorporate Vegetables: Add the sliced carrots and drained chickpeas to the pot, stirring well to combine.
- Add Tomatoes and Spices: Pour in the diced tomatoes and sprinkle the Moroccan spice blend over the top. Stir everything together to ensure the chicken and vegetables are coated in the spices.
- Simmer: Bring the mixture to a simmer. Cover the pot and reduce the heat to low. Allow it to cook for 25-30 minutes, or until the chicken is cooked through and tender.
- Check Seasoning: Taste and adjust the seasoning with more salt and pepper if needed.
- Garnish and Serve: Once cooked, remove from heat. Garnish with fresh cilantro or parsley before serving.
