Delicious Italian Sausage and Potato Soup


Ingredients

  • 1 lb Italian sausage (spicy or mild)
  • 4 medium Yukon Gold potatoes, diced
  • 2 medium carrots, diced
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 2 cups kale or spinach, chopped
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté chopped onion and minced garlic until translucent.
  2. Crumble in the Italian sausage and cook until browned.
  3. Add diced potatoes and carrots; stir for about five minutes until slightly softened.
  4. Pour in chicken broth and add thyme and oregano. Bring to a boil, stirring occasionally.
  5. Reduce heat to simmer; stir in kale or spinach until wilted (about 2-3 minutes).
  6. Taste and adjust seasoning before serving hot with crusty bread.
