Delicious Italian Sausage and Potato Soup
Ingredients

- 1 lb Italian sausage (spicy or mild)
- 4 medium Yukon Gold potatoes, diced
- 2 medium carrots, diced
- 1 medium yellow onion, chopped
- 3 cloves garlic, minced
- 6 cups low-sodium chicken broth
- 2 cups kale or spinach, chopped
- 1 tsp dried thyme
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat olive oil over medium heat. Sauté chopped onion and minced garlic until translucent.
- Crumble in the Italian sausage and cook until browned.
- Add diced potatoes and carrots; stir for about five minutes until slightly softened.
- Pour in chicken broth and add thyme and oregano. Bring to a boil, stirring occasionally.
- Reduce heat to simmer; stir in kale or spinach until wilted (about 2-3 minutes).
- Taste and adjust seasoning before serving hot with crusty bread.
