Description
These Cinnamon Roll Cookies combine the soft, spiced flavors of classic cinnamon rolls with the convenience of a cookie. Soft dough rolled in cinnamon sugar, baked to golden perfection, and topped with a creamy cinnamon cream cheese frosting.

- 1 cup unsalted butter, softened
- 1 cup granulated sugar (can substitute half with brown sugar)
- 2 large eggs
- 1 tablespoon vanilla extract
- 2 3/4 cups all-purpose flour (more if needed)
- 2 teaspoons baking powder
- 2 teaspoons ground cinnamon
- 1/2 teaspoon sea salt
- Cinnamon sugar, for rolling (optional)
- 4 ounces cream cheese, softened
- 8 tablespoons unsalted butter, softened
- 2 1/2 cups powdered sugar
- 1 teaspoon vanilla extract
- 1–2 teaspoons milk or cream, as needed
- Ground cinnamon, for sprinkling
Instructions
- In a large bowl or stand mixer, beat the softened butter and granulated sugar together until light and fluffy.
- Incorporate the eggs one at a time followed by the vanilla extract, mixing well after each addition.
- Combine the all-purpose flour, baking powder, ground cinnamon, and sea salt in a separate bowl, then gradually add to the wet mixture.
- Cover the dough and chill it in the refrigerator for 30 minutes.
- Preheat your oven to 375ºF and line baking sheets with parchment paper.
- Roll the dough into one-inch balls and optionally roll in cinnamon sugar, then flatten each ball.
- Bake for 7 to 8 minutes, or until the bottoms are barely golden. Remove from oven and cool on racks.
- Beat the softened cream cheese and butter until light and fluffy, then gradually beat in powdered sugar.
- Pipe the frosting onto the cooled cookies and sprinkle with ground cinnamon or cinnamon sugar.
- Store the frosted cookies in a covered container at room temperature for up to 3 days.

- Chill the dough to make it easier to handle.
- Do not overbake to keep cookies soft.
