Description

These Cinnamon Roll Cookies combine the soft, spiced flavors of classic cinnamon rolls with the convenience of a cookie. Soft dough rolled in cinnamon sugar, baked to golden perfection, and topped with a creamy cinnamon cream cheese frosting.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar (can substitute half with brown sugar)
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 2 3/4 cups all-purpose flour (more if needed)
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon sea salt
  • Cinnamon sugar, for rolling (optional)
  • 4 ounces cream cheese, softened
  • 8 tablespoons unsalted butter, softened
  • 2 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 12 teaspoons milk or cream, as needed
  • Ground cinnamon, for sprinkling

Instructions

  1. In a large bowl or stand mixer, beat the softened butter and granulated sugar together until light and fluffy.
  2. Incorporate the eggs one at a time followed by the vanilla extract, mixing well after each addition.
  3. Combine the all-purpose flour, baking powder, ground cinnamon, and sea salt in a separate bowl, then gradually add to the wet mixture.
  4. Cover the dough and chill it in the refrigerator for 30 minutes.
  5. Preheat your oven to 375ºF and line baking sheets with parchment paper.
  6. Roll the dough into one-inch balls and optionally roll in cinnamon sugar, then flatten each ball.
  7. Bake for 7 to 8 minutes, or until the bottoms are barely golden. Remove from oven and cool on racks.
  8. Beat the softened cream cheese and butter until light and fluffy, then gradually beat in powdered sugar.
  9. Pipe the frosting onto the cooled cookies and sprinkle with ground cinnamon or cinnamon sugar.
  10. Store the frosted cookies in a covered container at room temperature for up to 3 days.
