- 4 boneless, skinless chicken breasts
- 1 cup grated Romano cheese
- 1 cup breadcrumbs (preferably Italian-style)
- 1/2 cup all-purpose flour
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- Olive oil (for frying)
- Fresh parsley (for garnish, optional)
Instructions
- Start by gently pounding the chicken breasts to an even thickness of about 1 inch.
- Set up the breading station: Place flour in the first dish, beaten eggs in the second, and mix Romano cheese, breadcrumbs, garlic powder, onion powder, oregano, salt, and pepper in the third.
- Coat each chicken breast in flour, then dip into beaten eggs, and finally coat in the breadcrumb mixture.
- Heat about 1/4 inch of olive oil in a large skillet over medium heat until shimmering.
- Carefully place the breaded chicken breasts in the hot oil. Fry for about 5-7 minutes on each side until golden brown and cooked through.
- Transfer the chicken to a plate lined with paper towels to drain excess oil.
- If desired, sprinkle fresh parsley over the chicken for garnish.
