Description
Chicken Parmesan Soup is a creamy and hearty twist on the classic Italian dish. It combines tender chicken, savory tomato flavors, and melted cheese into a comforting soup perfect for any occasion.
Ingredients
Scale
- 1 lb boneless, skinless chicken breasts, diced
- 1 tablespoon olive oil
- 1 small onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup fresh basil, chopped (for garnish)
- Croutons (optional, for serving)
Instructions
- In a large pot, heat olive oil over medium heat. Add diced chicken and cook until no longer pink, about 5-7 minutes.
- Add chopped onion and minced garlic to the pot. Sauté until the onion is translucent, about 3-4 minutes.
- Pour in the chicken broth and canned diced tomatoes, including their juice. Stir to combine.
- Add dried basil, dried oregano, salt, and black pepper. Stir well and bring to a boil.
- Once boiling, reduce heat to low and simmer the soup for about 10 minutes, allowing the flavors to meld.
- Stir in the heavy cream, mozzarella cheese, and Parmesan cheese. Continue cooking until the cheese is melted and the soup is heated through.
- Taste the soup and adjust the seasoning if required.
- Remove from heat and garnish with fresh basil before serving.
Notes
- For best flavor, use fresh herbs and quality chicken.
- To thicken the soup, blend a portion and return it to the pot.
- Add red pepper flakes or hot sauce for a spicy kick.
- A splash of lemon juice before serving brightens flavors.
- Serve warm for the best taste.
- Rotisserie chicken can be used as a substitute for fresh chicken.
- For a dairy-free version, use coconut milk or cashew cream and dairy-free cheese.
- Add jalapeños or hot sauce for more spice.
- This soup can be made a day ahead.
- Vegetable broth or seasoned water can substitute chicken broth.
