- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 3 medium carrots, sliced
- 2 celery stalks, sliced
- 8 cups chicken broth
- 2 cups cooked chicken, shredded (rotisserie chicken works well)
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- Salt and pepper to taste
- 2 cups egg noodles
- Juice of 1 lemon (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic, sliced carrots, and celery. Cook for an additional 5 minutes.
- Pour in the chicken broth and bring to a boil.
- Once boiling, add the shredded chicken, dried thyme, dried parsley, salt, and pepper. Stir to combine.
- Add the egg noodles to the pot and cook according to package instructions, usually about 6-8 minutes.
- Taste the soup and adjust seasoning if necessary. For added brightness, stir in the lemon juice.
- Remove from heat and ladle into bowls. Garnish with fresh parsley before serving.

- If you prefer a lighter soup, skim the fat from the broth after cooking.
