  • 8 cups chicken broth

  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste
  • 2 cups egg noodles
  • Juice of 1 lemon (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic, sliced carrots, and celery. Cook for an additional 5 minutes.
  3. Pour in the chicken broth and bring to a boil.
  4. Once boiling, add the shredded chicken, dried thyme, dried parsley, salt, and pepper. Stir to combine.
  5. Add the egg noodles to the pot and cook according to package instructions, usually about 6-8 minutes.
  6. Taste the soup and adjust seasoning if necessary. For added brightness, stir in the lemon juice.
  7. Remove from heat and ladle into bowls. Garnish with fresh parsley before serving.
